Escape to Sinclair’s Gully – a vineyard meets nature sanctuary with the highest conservation classification in the Mt Lofty Ranges.
Wander around the incredible wild Australian bushland, learn about sustainable environmental practices and leave with a bottle of sparkling wine that you’ve handcrafted yourself using old-world traditional methods.
Sinclair’s Gully is so much more than just a sustainable and biodynamic vineyard. Dedicated to preserving the land for future generations, owner and vigneron, Sean Delaney and his wife Sue are leading the way in conservation and sustainability practices. Protecting the rare and endangered species that live on their 20-acre private nature sanctuary sits at the heart of their operation.
In this unique and inspiring session, take a walk with Sean to the forest where he will share with you the importance of defending Australia’s fragile ecosystem and what they do to protect and conserve the critically endangered candle bark forest they hold themselves custodians of.
Knowing that no one wants to leave a vineyard empty-handed, Sean will guide you through the delicate process of handmaking fine sparkling wine. Reconnect with a bygone era as you hand disgorge, dosage and cork your very own bottle of sparkling wine to take home with you.
A morning and afternoon session will be offered with the forest walk overlapping both events. If you don’t need to rush off, you are invited to bring along a picnic to enjoy on the property before or after the experience, depending on whether you book the first or second session.
