CanDo Cancer Trust Degustation


You are invited to experience a culinary journey of the Coffs Coast with celebrated chef Colin Fassnidge and join in supporting CanDo Cancer Trust’s biggest ever single charity event!

Savour a delicious seven course degustation featuring produce from across the Coffs Coast matched with superb wines. You will enjoy a night of fine dining, entertainment including music and special guests, community spirit and good friends.

The menu has been designed by Colin Fassnidge to delight the gastronomic senses and celebrate our local food producers, farmers and fishermen. He will guide the dinner preparation alongside The Hilltop Store’s award-winning chef duo, Carla Jones and Richie Dolan.

Our local TAFE hospitality students will receive an amazing training experience as they assist with cooking and serving – and event management students have been hands-on in planning the evening. The sommelier skills of Phil Caldicott, head of Hospitality and Tourism, have also been utilised to create a fabulous list of wines, unique Coffs Coast cocktails and local craft brews.

Don’t miss this inaugural degustation event and the black tie event of the year as CanDo celebrates the 10th year of assisting local cancer patients.


  • Dress to impress!

  • Due to the nature of the event, special dietary requirements cannot be catered for.

  • You may be photographed on the evening and images may be used to promote local producer and apprentices.

  • Part of your ticket price is a charitable donation to the CanDo Cancer Trust. A receipt will be issued via email.

  • Tables seat 10 people only. Select a table number when making your booking – advise friends of your table number so they can join you.


Your ticket includes a seven course degustation dinner plus all beverages.
PLUS every ticket includes a receipted tax deductible donation to CanDo Cancer Trust.

Table of 4 or more: $200 per ticket ($150 donation)
Table of 10: $2,000 per table ($1,500 donation)
Single: $300 per ticket ($250 donation)
Couple: $500 per ticket ($400 donation)
