ASCA Cheese, Wine and Talk: Alpage Cheesemaking
The Australian Specialist Cheesemakers' Association (ASCA) invites you to an afternoon of beautiful imagery and discussion showcasing raw milk cheese production in the Valley de Bagnes, Switzerland. Join Christophe Prodanu, third generation French cheesemaker as he takes us into his rustic world of raclette production at 2000m altitude. Christophe will share with us the tradition of cheesemaking on alpage - the summer pasturage of animals in the mountains – and the culture that surrounds this timeless cheese production.
This is a lovely opportunity for cheese makers and cheese lovers to be inspired by a dedicated cheesemaker as we observe his season on Alpage and consider how it relates to the Australian context.
To complement this fascinating discussion we will taste some of Australia’s best raclette and mountain-inspired cheeses, including from L’Artisan (VIC), Section 28 (SA), Marrook Farm (NSW) and this year’s Grand Dairy Awards Champion Cheese ‘Heidi Raclette’ (TAS) served in swiss tradition.
All accompanied by local Boomtown Wines, available to purchase at reasonable prices.
