Accompanied by a tropical mango salsa, citrus aioli, salmon roe and lightly pickled cucumber coin

Served with cauliflower puree, pistachio dust, smoked onion and rosemary lamb reduction

Pavlova shard with chantilly cream, fresh mango and passionfruit pulp
