Inspired by the International Year of Rangelands and Pastoralists 2026, this special evening celebrates our local landscape, pastoral heritage and local meat through a carefully curated three-course dining experience.

Enjoy an exceptional selection of wines, beer, cider and a signature cocktail as the sun sets over the red-dust desert and the stars begin to fill the sky.

Settle in and enjoy live acoustic performances from Tess Fapani, Chris Cobb and Amberley Maryellen, creating the perfect soundtrack for an unforgettable night under the stars.

Appetiser:

• Corned beef croquettes, aioli;
• Salt bush and pepper berry Emu Capaccio, karkalla, endive, mustard greens, Davidson Plum aioli, Noon flower (df);
• Artisan bread baskets and butter.

Entrée:

• Wattle seed raviolo filled with potato, bone marrow, curd & black garlic, Quandong & tom berry Brodo.

Main:

• Mountain pepper braised Beef cheek, lemon myrtle potato puree, warragal greens, chimichurri (gf, df).

Sides:

• Dutch oven Pumpkin & pepita scone, nut brown butter;
• Beef & Ancient grain campfire peppers (gf, df);
• Green beans, peas, spinach, toasted macadamias.

Dessert:
