Learn our traditional country cooking. It'll put a smile on the faces of friends and family. Try your hand at Chicken Fried Steak, Cornbread, Sawmill Gravy, Baby Back Ribs, Nashville Hot Chicken (including how to properly break down a bone-in chicken). Sides, sauces, greens and more. All the stuff you always wanted to try and a few things you've never seen before. Your hosts are professional cooks & pitmasters from the US and Australia. (Everything You Didn't Know About) Tex-Mex Cooking Class

Tex-Mex is a fusion cuisine that is often misunderstood in Australia as "inauthentic" Mexican food. It's not that at all! Tex Mex is heavily influenced by it's intertwined history with Mexican cuisine. However, it is just as much Native American and Southern food, containing well-documented traditional dishes that were never Mexican at all. Examples of what people call "Mexican food" that are really Tex-Mex include nachos, fajitas, chili con carne, chimichangas and more. You'll learn: -The basics of choosing the right chillis for your tastes. - how to make your own fresh tortillas - Jalapeno poppers two ways - The best bowl of chili con carne ever - Steak fajitas, piping hot with all the stuff - Chipotle black bean & chicken tacos - Coriander lime rice - Salsas & guac We'll talk beer pairings with some delicious lagers & ales from Hard Road Brewery. Father's Day Wings n' Things Cooking Class for 2 (or more)

This is a fun, hands-on cooking class for Dad's and kids. Just two hours on the big day, making some of the most delicious things known to man! Leave a little quiet around the house for Mum too! ;D) We're going to prep up some chicken wings that we'll pop into the smoker to crisp up while we sit in a/c (or heated) comfort and prepare 3 sauces to toss them in later. We're also going to be making bacon and cheddar topped potato skins that will knock Dad's socks off. And finally, we'll cook up some delicious brown sugar baked beans (a secret family recipe we'll share!). Of course, Dad gets a beer too. Sponsored by Hard Road Brewing. Minimum age of 8, with Dad's careful supervision around heat, utensils and washing up before and after meat handling.

Whether you're a beginner or even if you've had a bbq class before, you're going to find and do things that you haven't experienced before. Join in as your professional (US and Australian born) pitmaster hosts cover cuts and techniques that are relatively unknown outside the U.S., along with the classics like Central Texas Brisket and KC style ribs. Why is brisket from Texas & white sauce from Alabama? Is it kosher not to use kosher salt when all the recipes keep calling for it? Did you know that St. Louis style ribs aren't cooked the same way as baby backs? Heard of "country style" ribs? Or tasso? We'll hit traditional sides & sauces as well. Enjoy a Hard Road beer while you glove up & work out those cooking kinks. No sitting around in rows under a marquee here unless that's your thing. Our The Ranch Hand joint is laid back & friendly. Comfortable & climate controlled inside. We'll have a big ol' 500 gallon offset going, pellet smokers plus a few others to work at
