The CIT Hospitality, Culinary and Tourism department have the privilege of collaborating with some of Canberra’s inspiring chefs and apprentices from Harvac Group (Akiba ,Wilma & Loquita restaurants), Ginger Catering and Canberra Southern Cross Club. Over two days, the CIT commercial cookery students will be mentored to bring together an amazing 3 course dinner event for the Canberra community.$75 per person includes an arrival beverage and a 3 course menu with matching wines.
Entrée: Ocean trout
kalamansi + rillette + sea vegetable
Main: Slow cooked lamb shoulder
eggplant + hazelnut + pomegranate
Dessert: Matcha cake
yuzu curd + fennel ice cream + Davidson plum meringue
