Terrine de Canard aux Pistaches: Armagnac gel, pickled rainbow carrots, onion pearls, toasted brioche
Beetroot Tartare tartlet: goat cheese mouse, pistachio crumble
Rock Oysters: mignonette champagne granite, chives
Lobster Thermidor: tarragon crisps, pea puree, parsley EVOO
Snapper Poele: fennel puree, saffron Beurre Blanc, Kaviari Caviar
Chicken Ballotine: wild mushroom duxelles, chicken jus, pumpkin puree
Fillet de Boeuf Rossini: beef tenderloin, foie gras, cognac peppercorn, toasted brioche
Fraisier: Pain de gênes almond biscuit, roasted strawberries, strawberry rhubarb confit, vanilla mousseline cream, fresh strawberries
