From an early age, he was formed in kitchens where recipes were not written, but lived — passed down through generations and shaped by the land and sea of Crete. He has worked across diverse hospitality environments on the island, honing his craft through hands-on experience with local producers, fishermen, and seasonal ingredients. Tasos cooks with intention, believing that great food carries memory, identity, and soul. Through his work, he champions Cretan cuisine not as a relic of the past, but as a powerful, living tradition worthy of the modern table.
