WHAT IF?That’s the question chef Eilish Maloney asked herself on returning to the Southern Highlands after a stellar career working in starred and hatted restaurants around the globe. From joining the new Sydney Nomad at 18, she then moved to London and started work at the famed The Ledbury. After further stints in Europe, the U.S. and South Africa, Eilish returned to Sydney in 2017 to join Josh Niland at the acclaimed Saint Peter, becoming head chef at age 24.
It was working with these top chefs and their interest in ethical and sustainable practices, along with the influences from her childhood, growing up in a Southern Highlands farming community, that set Eilish along the path to establish The What If Society – a sustainable food co-operative.
The society is committed to zero food waste, strict seasonality and use of produce sourced where possible from local farmers and suppliers.
Today Eilish and her team run The Studio in Moss Vale – a café cum wine bar and, a few doors down, The Exchange, a local grocer and providore where you can find their own freshly baked bread, pickles and fermented goods, seasonal produce and even local art!
Join us at The Studio on Saturday 2 May, where you can enjoy shared platters of Eilish’s delicious food at long tables with Slow Food members and friends. Due to its seasonality every meal is a surprise and even if you have previously visited The Studio you will be in for a treat. Prior to lunch, while you enjoy a drink, Eilish will talk about her journey and vision.

After lunch you can spend some time visiting The Exchange.
