Our first Wine & Dine event is guided by Corey Fowler, a highly accomplished chef whose career spans everything from high volume kitchens to refined, hatted dining experiences. Corey brings a rare blend of technical skill, creativity, and a deep respect for quality produce.
His experience includes time at some of Australia’s most respected venues, including Gaeh, one of Melbourne’s top One Hat restaurants, where precision and innovation shaped his approach to fine dining. He has also cooked at Tokar Estate Winery in the Yarra Valley, honing his craft in vineyard driven, seasonal cuisine, and at Melbourne’s beloved Spanish institution MoVida, where he immersed himself in the bold, vibrant flavours of Spain.
The menu reflects that journey - a celebration of Spanish tradition elevated through Corey’s refined technique and passion for creating memorable food.
The Wine & Dine event is proudly paired with wines crafted by Mark Heath, the vigneron behind Gippsland Wine Company. With more than 40 years of experience across the Barossa Valley, Clare Valley and Yarra Valley, Mark’s career spans wine sales, marketing and hands on production - a rare combination that gives him a deep, intuitive understanding of both vineyard and glass.
After decades working with some of Australia’s most respected wine regions and producers, Mark followed his long held dream of establishing his own vineyards in Gippsland, eventually settling in Loch, where Gippsland Wine Company now thrives. His focus is on producing premium, varietal wines that showcase the unique regional character and cool climate elegance Gippsland is known for.
The result is an award winning portfolio that reflects Mark’s craftsmanship, patience and passion for honest, expressive wine - the perfect match for the events Spanish flavours.
